Hotel Saint Augustine Opens in Houston

Hyatt Hotel Corporation announced the opening of the Hotel Saint Augustine in the Montrose neighborhood of Houston earlier this week. The new boutique property from Bunkhouse Hotels, part of Hyatt’s Lifestyle group, is spread across 2.2 acres and offers 71 rooms and suites in five buildings.

Hotel Saint Augustine is the first Bunkhouse hotel in Houston and continues with the brand’s tradition of naming hotels after patron saints. Amar Lalvani, President and Creative Director of Lifestyle at Hyatt, had this to say about Bunkhouse’s foray into the Houston market:

“Adding a Bunkhouse hotel in Houston has been our team’s dream for a long time. Houston is an underappreciated capital of culinary, culture, art, and design, and those things are all core to the Bunkhouse mission. We can’t wait to become a part of such a rich and diverse local community and introduce new visitors to a city we love.”

Hotel Saint Augustine Guest Rooms

The property is divided into several small buildings connected by open-air bridges and courtyards, which help maintain a sense of community and flow throughout the hotel. It also means that the hotel has a variety of different room styles which range from 200-sq-ft “Petite Queen” rooms to “Atelier” suites complete with private outdoor living space.

According to Hyatt, the smaller rooms are to help ensure local art and culture are accessible for all. Though, with rooms starting at $429 a night, that’s a steep price for something roughly the size of a large master bathroom.

Hotel Saint Augustine Amenities

Hotel Saint Augustine has two food and beverage concepts which are helmed by the hotel’s restaurant partners: Houston’s well-known chef and restaurateur Aaron Bludorn and Cherif Mbodji. They have successfully opened three restaurants in Houston, including Bludorn, which was a semifinalist in the 2024 James Beard Awards, Navy Blue, and Bar Bludorn.

Perseid, the hotel’s all-day restaurant, serves a menu inspired by the diverse culinary influences that shape Houston’s food scene. Combining Texas Gulf Coast flavors with French touches, the restaurant offers dishes that emphasize bold, balanced flavors. The drink menu features seasonal cocktails named after Houston and Montrose icons, along with a selection of French wines and other small producer wines from around the world.

Augustine Lounge and Listening Room provides a space for guests to enjoy breakfast, an all-day menu, and a variety of drinks throughout the day. It offers everything from sweet and savory breakfast options to sharable bites and cocktails. A record player and restored tape recorder provide music for the space.

Hotel Saint Augustine also has an event space that sits on top of the Perseid restaurant. It can accommodate events for up to 250 guests with porches overlooking the courtyard and pool.

While Bunkhouse may be new to the Houston area, it’s brands are well known to folks just up the road in Austin. Bunkhouse has developed a large portfolio throughout the state and beyond with projects like portfolio of hospitality projects in Texas and beyond, which include Hotel San JoséAustin Motel, and Jo’s Coffee, where the famous “I love you so much” mural is located, in Austin.

Summary

Hotel Saint Augustine offers a stylish and convenient base for exploring Houston’s Montrose neighborhood. The design is a little quirky but, based on the company’s other projects, I know it will be done with great attention to detail. Prices are steep and I probably won’t have a reason to stay here any time soon but, it is nice that the property is part of World of Hyatt.
